Nordic Creamery
Nordic Creamery™ artisanal butters are crafted by Al Bekkum, a long-time licensed Wisconsin buttermaker and cheese crafter. Al is as persnickety about milk sources for his collection of artisanal butters as he is about milk for his specialty and artisanal cheeses. His products always start with Wisconsin's highest quality milk. Milk for his butter is from a single farm, it's organic and the cows are grass fed.
Al and Sarah Bekkum and their six children live on the Langaard homestead, family-owned since emigrating from Norway to Wisconsin in 1888. The farm is located in Westby, Wis., in the lush, green hills and valleys of the Norwegian settlers' area known as the “Coulee” region. It is situated in the Driftless geography of rich, unglaciated land that is exceptional grazing country for cows and goats.
Al crafts his European-style traditional butters in small batches from the milk of farmstead cows living in a Wisconsin prairie-grass environment.
“Summer Butter” is made from organic farm-fresh sweet cream from April to October when cows are on pasture, creating fresh, herby flavors and a sunny, yellow color.
“Harvest Butter” is crafted with sweet cream from the same dairy herd, nourished from fall to spring by harvested Wisconsin grasses and grains, to create a distinct, intense creamy flavor and color.
Al plans to add a whey cream goats' milk butter to his collection of artisan butters when he finds the perfect whey cream.
Nordic Creamery butters are lightly sea-salted for use as a table butter or cooking/baking ingredient. Butter varieties are available in cases of six 12-oz. plastic tubs.
