The Faribault Dairy Company began making this fine blue cheese in 2002 and promptly won Second Place at the American Cheese Society Conference, and First Place at the World Cheese Awards in London in the same year. Classic Provisions is proud to be one of their initial customers, placing our first order in June, 2002. This wonderful, raw-milk cheese has a rich creamy texture and prominent blue veining. St. Pete's is aged for 100 days in natural sandstone caves which helps bring out a complex, piquant flavor with a clean finish. Enjoy as a dessert course with a late-harvest Riesling, or try it crumbled in salads, or for topping burgers, steaks, or pasta.
