Black Garlic
Finding great popularity with chefs internationally, Black Garlic is now stocked locally by Classic Provisions.
All natural Black Garlic begins with a California grown product. Using a high-heat, month-long fermentation process, fresh garlic is transformed into dark and tender black cloves which adapt and expand to a wide variety of applications.
Black Garlic contains no preservatives and contains about twice as many antioxidants as fresh garlic. In Taoist mythology, black garlic was believed to grant immortality.
The flavor profile is unexpected. Foremost, the flavor of garlic shines through. Expect an earthy, less potent blast than fresh... a complex richness described by our staff as “licorice, umami, molasses, coffee and chocolate”. Texture wise, the cloves are tender, almost like a dried fruit.
Stocked in 1lb packs, each pack contains individual bulbs of garlic. Cloves of the “black gold” are easily removed from their natural paper. Elegant in its simplicity, single cloves stand out on a cheese plate or on a flatbread pizza. Versatile, the garlic can be used in many of the same ways you would use raw or roasted garlic, including in vinaigrettes or a pan sauce.
