Goat’s Milk Butter from Nordic Creamery

Nordic CreameryThis summer, the deliciously handcrafted goat’s milk butter from Nordic Creamery will be produced at a newly built creamery on the Bekkum‐Langaard farm near Westby, Wisconsin. Al Bekkum has been making cheese and butter for more than 20 years at nearby plants and now will put that expertise to work in the family’s new farmstead creamery. The Bekkum’s vision is to produce butter on the farm with the freshest milk source possible. This area of Wisconsin is known for its rich, unglaciated land, which produces exceptional grazing for goats, sheep and cows. The farmstead creamery helps make Al and Sarah’s vision possible and allows Al to continue crafting European and traditional style butters in small batches, all hand packed.

Nordic CreameryThe goat milk butter has been fashioned to bring out the most natural colors and flavors as influenced by the pastures in the area. The creamy white appearance, along with the smooth taste, make it a perfect pairing with bread and crackers, or in the summer, slathered over fresh sweet corn.

In addition to butter, Nordic Creamery produces two goat’s milk cheeses that are favorites of Classic Provisions customers: Mountain Jack, a semi soft cheese with a rich creamy flavor and Grumpy Goat, a semi‐hard cheese with a robust flavor and rich creaminess… even after one year of aging.

Nordic CreameryAl’s two popular mixed‐milk cheeses ‐‐Capriko and Feddost ‐‐are handcrafted Scandinavian‐style cheeses. Capriko has a nutty, buttery flavor and Feddost, which balances sweet creaminess with warm spice.
