PastureLand

PastureLand LogoPastureLand is a cooperative of six family owned dairy farms in southeast Minnesota, committed to producing fine organic butter and cheese from the milk of their grass fed herds. These happy cows are pastured year round, in summer grazing on a variety of fresh grasses sown from seed. In winter they are fed hay and fermented pasture grasses harvested during the growing season. PastureLand's delicious butters and cheeses are made only from the rich milk the cows produce during grass season. Some studies have shown that milk from grass fed cows is nutritionally superior to that of grain fed cows. The cows are certainly healthier, with daily exercise and a natural grass diet. Grazing also has environmental benefits: pasture grasses benefit the soil, preventing erosion and encouraging water absorption. And the cows take care of fertilizing!

Classic Provisions offers the full PastureLand line, including salted and unsalted butter, flavored and aged goudas and cheddars. Both the unsalted and salted butters have won First Place honors at the American Cheese Society. A recent introduction is the excellent Raw Milk Organic Cheddar, aged six months and delightfully tangy.

We're very excited about their newest cheeses, three American originals in the Alpine style: Thoten is salt rubbed, Berne is washed in Riesling and caraway and Sogn is bacteria schmeared for a hearty, assertive flavor. These are available in limited quantities only, as the first batch comes of age.
