Yuzu JuiceSudachi is a Japanese citrus fruit akin to its slightly more famous cousin, Yuzu. The plant has white flowers which bloom in May and June. Sudachi is harvested while still green like a round lime, which occurs during September to October. It contains more calcium and Vitamin C than lemons, and is often served on the side of several traditional Japanese dishes to add a nice shot of delicious acidity.

A slice of this fruit is served with many traditional Japanese dishes which include fish, soba, udon, nabe, ginger and even some alcoholic beverages. It is considered to have a zestier flavor and aroma than lemons or limes and white or maybe pink peppercorn, and it's delicious. Besides being peppery (and, of course, very acidic), there's other subtle layers of spices like cumin or cardamom. It would blend nicely with spirits. Sudachi also flavores products such as ice cream, vodka coolers, ice pops, and soft drinks which can also be found in Japan, particularly in Tokushima Prefecture, where the fruit is sold cheaply. The actual fruit is regarded as a delicacy in other parts of Japan, as it is often expensive.

It also boasts a higher calcium and ascorbic acid (vitamin C) content than lemons. In 2006, a Tokushima University research team published a report which suggests that the fruit may be effective in lowering glucose levels in diabetic patients.

The yuzu is a Japanese citrus fruit (Citrus junos (Rutaceae) which is about the size of a tangerine and is quite sour. A hybrid of a primitive citrus called Ichang Papeda and a sour mandarin orange. The yuzu originated in China but is most widely cultivated in Japan, where shreds or slivers of its rind are used to accent cooked vegetables, fish and noodles. Its zest and juice enhance soy sauces, miso toppings, ponzu sauces and vinegars. The Yuzu is difficult to find in the U.S. Occasionally you may find fresh fruit but it is quite rare in the U.S.

The mature fruit produces little juice and is most highly prized for its fragrant floral-scented zest, which seems to combine the best flavors of lemon, mandarin orange, and tangerine. The unripe fruit, with its green rind, does provide some juice, which is exceedingly sour and delicious. Over time, the fruit ripens from green to bright yellow, when it is sweetest and most aromatic.

When cooking, use a small amount of yuzu juice. Its intense power means that one must be careful of quantity in braising liquids for fish and vegetables. Combine a little with raw tuna and eat it spooned over good bread. It's also delightful mixed into a spoonful of miso, and then spread on fish and broiled. Or try some in a salad dressing along with some good olive oil, yogurt, and maple syrup.

Many are pushing the boundaries as they use it in ice creams and other desserts, cocktails, salad dressings, and all kinds of savory dishes like using the juice to cure foie gras; the acidity complements its fattiness. Yuzu has an amazing floral citrus fragrance.

Yuzu MarmaladeToday, fresh and processed yuzu are the rage at high-end restaurants, for cocktails, savory dishes and sweets. Yuzu is less sharp and more subtle than lemon, allowing its fruitiness to come through. The yuzu is a fruit tailor-made for drink making. Yuzu would be great blended into a pisco sour and blood orange and agave nectar. Dress up specialty drinks using Yuzu marmalade whipped into a Margarita. In Korean cuisine, yuzu (called yuja in Korean) is used, thinly sliced and combined with sugar and honey, to make a thick, marmalade-like syrup containing pieces of the chopped rind and fruit. A tablespoon of this syrup stirred into a cup of hot water makes a beverage called yujacha.

Yuzu is also known for its characteristically strong aroma, and the oil from its skin is marketed as a fragrance. In Japan, bathing with yuzu on Toji (the winter solstice) is a popular custom. The whole fruits are floated in the hot water of the bath (sometimes enclosed in a cloth bag), releasing their aroma.
